Abstract

Rationale: Wheat cereals are known to be capable of triggering wheat allergy and celiac disease. Recently, another clinical entity was described, the non-celiac wheat sensitivity (NCWS). Until now the pathomechanisms as wells as the trigger of NCWS could not been identified but it is suspected that the immune system is involved in the form of inflammatory processes. In this study we wanted to figure out if different manufacturing processes of bread could influence inflammatory processed and the intestinal barrier in a mouse model of inflammatory bowel disease (IBD).
