Abstract

The objective of this work was to determine the incidence of PSE and DFD muscle in pigs slaughtered in the Baji­o region of Mexico and its relationship with season and farm type. The study was carried out in summer and fall in 1,099 pigs from technified (TF) and non technified (NTF) farms. Animals were housed in resting pens for 18 to 24 h offering only water and slaughtered by conventional procedures using electric stunning. Measurements of hot carcass weight, pH45, pH24, L*, a*, b* and WHC were carried out. Criteria for PSE muscle was pH45 5.9 and 48, and for DFD muscle pH45 ≥,,, 6.4 and L* <=,,, 48. In fall incidence of carcasses with PSE and DFD muscles was 1.78 and 10.2 % for TF and 8.0 and 12.40 % for NTF pigs, respectively. In summer TF pigs had 3.5 and 22.0 %, and the NTF showed 1.0 and 28.0 % for PSE and DFD, respectively. Presence of carcasses with PSE muscles was affected by ante mortem handling whereas the presence of DFD muscle was mainly affected by the season. It is recommended to provide ante mortem low stress handling of pigs and to carry out studies on in vivo detection of these muscle abnormalities.
