Abstract

ABSTRACTIn‐vitro protein digestibility of freeze‐ or spray‐dried protein obtained from poultry bone residue by alkali extraction was evaluated by a multienzyme procedure. Digestibility of the dehydrated extracts was significantly lower than chicken breast muscle or mechanically de‐boned poultry. Digestibility of the spray‐dried extracts was about 3% higher than freeze‐dried extracts.
