Abstract

Internet of things (IoT) has seen a wide use in supply chains with remarkable success in food supply chains. There have been many descriptive studies that focused on highlighting the benefits of using IoT in supply chains. Similarly, there are many engineering and design studies that focused on technical hardware issue for IoT sensors and technology in supply chains. In contrast, there is a scarcity of studies that looks at analytical operational models. This chapter will contribute to filling this gap by proposing models to study the impact of investment in IoT sensors on coordination and waste reduction in food supply chains. Our analysis reveals that IoT can coordinate the supply chain. We also show how IoT can lead to a reduction in food waste.
