Abstract

Sucrose hydrolysis has been shown to be catalyzed by the presence of imidazole at an acid pH. The active species was determined to be the positively charged imidazolium ion. The results are interpreted to offer a possible explanation of the first step of the dextransucrase-catalyzed formation of dextran from sucrose.
