Abstract
A noted American specialist in Soviet and post-Soviet agriculture presents the results of and analyzes a 1997 survey of household budgets in Ukraine. The survey population (N = 14,900), selected by quota sampling, resided in all 25 of the country's province-level territorial units (urban respondents) and in the Crimean Autonomous Republic and 13 of the country's 24 provinces (rural respondents). The author discusses the sources of family income, the breakdown of expenditures, the consumption of basic food staples, as well as sources of food supply for villagers and residents of urban centers. Concluding comments focus on the dependence of urban and rural families on household plots, which affect patterns of food consumption.
