Abstract
Publisher Summary This chapter discusses the status and importance of aquaculture to the worlds' fishery supplies. It addresses the importance of international trade and that it is incumbent upon aquaculture-producing countries to ensure that all fishery products are safe and wholesome. Exporting countries must understand the regulatory requirements of importing countries and use appropriate risk management tools such as Hazard Analysis Critical Control Point [“HACCP”] and Good Aquacultural Practices [“GAqPs”] to ensure safe/wholesome products. The chapter describes the use of HACCP principles as a risk management tool to control shrimp viruses in aquaculture ponds and to control parasites in freshwater aquacultured catfish. A specific example on the use of HACCP principles as a risk management tool to protect the environment from possible disease, parasites, and germplasm introduction from an oyster hatchery used to hold and breed non-native oyster species is also presented.
