Abstract

Plant cell and tissue cultures can be used for the synthesis and production of secondary metabolites like colors, flavors, and sweeteners. Most often, plant cell cultures fail to produce the desired products. In such cases strategies to improve the production of secondary metabolites must be considered. Plant cell culture technology has now reached the point where a variety of culture types can be critically assessed as potential sources of existing and novel flavors and pigments. This brief review gives examples where progress has been made in the development of plant tissue culture systems.
