Abstract

Graphical Abstract Front Cover. Sake (a traditional Japanese alcoholic beverage) contains flavors such as ethyl caproate (EC) and Isovaleraldehyde (IVA). EC, is known as apples or pineapples flavor, enhances its economic value of beverage. Some people enjoy IVA. After adding EC or IVA, it was observed that decreasing phase separations on cell-sized liposomes made from 1,2-dioleoyl-sn-glycero-3-phosphocholine, dipalmitoyl-sn-glycero-3-phosphocholine, and cholesterol. The findings of this study enhance not only our understanding of the biological function of flavors but also aid in rapid and cost effectively analysis, as reported by Tsuyoshi Yoda in his research article at 10.1002/cbdv.202200750.
