Abstract

Downward trends in student consumption of fruits and vegetables prompted the development of a training program for school foodservice staff as a strategy to improve appeal of fruits and vegetables for students. Learning objectives included: (1) understanding health benefits of fruit and vegetable consumption, (2) handling produce safely, and (3) practicing strategies for making fruits and vegetables appealing.
