Abstract

Fresh pork sausage is uncooked and contains lean pork, pork fat, and salt. It can be stored refrigerated or frozen and contains spices according to the type of pork sausage and desired flavor. In commercial products, additional ingredients may be added to prevent oxidation, slow microbial growth and/or enhance shelf life. This chapter is organized into sections, including fresh pork sausage ingredients, manufacturing equipment, sausage composition, and determination of product shelf life. This chapter will familiarize the reader with fresh pork sausages from different regions in the world. In addition, this chapter will enable the reader to identify ingredients and equipment that are used in fresh pork sausage production to produce a high-quality product with optimum shelf life.
