Abstract

Research has been conducted on the formulation and characterization of edible films from polyblend starch kimpul-polyvinyl alcohol with glycerol as plasticizer with starch kimpul-PVA ratio used for F1 3: 3, F2 2: 4 and F3 4: 2. Kimpul taro tuber starch is one of the taro varieties which has a high starch content and can be used as the main ingredient in making edible film. The method use is “Casting Method”. Evaluation of edible film includes organoleptic examination, thickness test, pH test, examination of moisture content, water vapor transmission rate test, percent elongation test and tensile strength, modulus young, and swelling test. The results from the evaluation of the water vapor transmission rate, swelling test and modulus young were analyzed using one-way ANOVA using the SPSS 16 statistical software. From the evaluation conducted, the edible film formula that fulfilled the characteristics was F2 with a thickness of 0.148 mm, pH 7.05, moisture content 15.16%, 44.67% elongation percent, 3.0271 N / mm2 tensile strength, 0.0691 modulus young, water vapor transmission rate 0.1234 mg / hour.cm 2 , and swelling test 53.1908 %. Based on the results of statistical analysis using one-way ANOVA using the SPSS statistical software there were significant differences in the young modulus and the water vapor transmission rate.
