Abstract

The fact is generally familiar to those concerned with public health matters that Massachusetts was the pioneer in establishing, some twenty years ago, a practical system of food and drug inspection. It is also universally recognized that the Massachusetts State Board of Health has in various ways given a powerful impetus to sanitary work of all kinds. Its activity has been displayed both in the original investigation of scientific problems and in the promotion of the publication of books and monographs dealing with the various undertakings in which it has been engaged. The present work on food inspection and analysis must rank as one of the most important that has issued from its laboratories.
