Abstract

This paper highlights different food classification systems that categorize foods in terms of degree of processing, study the similarities and differences between them and the applicability for Tunisian context will be addressed. The main challenge of this study is to harmonize national food processing for international comparison, yet to date there is a lack of comparable food classification system that incorporates food description in Tunisia which provides a flexible combination of classifications.
