The needs of food-allergic and intolerant consumers are an increasingly important consideration for food manufacturers. This chapter first examines the definition of food allergy and food intolerance in children and adolescents, the prevalence of these conditions, and their impact on health and quality of life. The role of food in the development and management of food allergies and intolerances is also discussed.
