Abstract

鳥取県境港で水揚げされたベニズワイ(Chionoecetes japonicus)を試料とし,揮発性成分をガスクロマトグラフ質量分析装置(GC/MS)により分析した.その結果,加熱によって,特にカニミソ(肝膵臓)の揮発性成分の種類が顕著に増加することを確認した.
