Abstract

A new method for continuous fermentation of brewer's wort is described; it uses a cylindrical vessel divided by rotating discs into several serial chambers and can reproduce the basic features of a tubular reactor. The method allows a progressive fermentation over a wide range of dilution rates although the extent of the fermentation gradient is reduced at higher flow rates. The composition of the product remains relatively constant at dilution rates between 10 and 100% per hour. Production of esters is related to the proportion of liquid which is recycled.
