Abstract

Fatty acids have a lot of functions: energy, structural, and functional roles. Essential fatty acids must be ingested because they cannot be synthesized by humans, but all fatty acids are useful. Oils are visible dietary fats. Fatty foods always contain many fatty acids. There is no perfect oil. This article gives information about the role of fatty acids and oils in cardiovascular prevention. Excess and mistakes have succeeded during decades and must lead to take care about advices and to promote variety.
