Abstract

There are a number of major factors which control the fatty acid composition of bovine depot fat (1) Age: the saturation of internal depot fat increases from birth to about 1 year of age mainly as a result of the deposition of stearic acid formed by hydrogenation in the rumen, (2) Stage of fattening: the depot fats become more unsaturated as the animal enters its fattening phase of development, which is usually at 12 — 18 months of age. (3) Anatomical position: subcutaneous fats are more unsaturated than intermuscular fats which in turn are more unsaturated than internal depots. (4) Diet: high concentrate diets result in the deposition of a more unsaturated depot fat compared to high hay diets which favour the deposition of more palmitic acid.
