Abstract

Introduction The food industry has increasingly been criticized for negatively impacting the environment with single-use packaging, food waste and emissions. This case illustrates how a bakery and coffee shop in Ireland is leading by example to reduce food waste, single-use plastics and electricity. Students will get insights into the challenges, solutions and benefits of leading by example and realizing that sometimes difficult decisions pay off. Bread 41 is leading the charge to inform and educate people on sustainability practices in the food service industry. This case will outline how leadership and innovation can create not only positive change but also engage customers and the media in the journey.
