Abstract
ABSTRACTPast investigations have suggested that various arylalkene spice compounds warrant further study as possible naturally occurring mutagens and/or carcinogens. The present study carried out a detailed examination of nutmeg oleoresin, myristicin, chili pepper oleoresin, capsaicin, and vanillylamine for in vitro mutagenicity using the Salmonella/mammalian microsome mutagenicity assay. None of the materials tested displayed significant mutagenicity over a wide range of concentrations.
