Abstract

The technological evolution in the production of olive oil from Middle Ages to the twentieth century, implies the adaptation of the olive oil industry to the different scenarios of the global oil market in that period. Following the traces of the mannerist painter Johannes Stradanus, the evolution in the design and technology of the olive oil factories is analyzed, identifying the fundamental changes that occurred in the different phases of the process represented by the artist.
