Due to the increasing world population, food and nutrient requirements are ascending
Legumes that make up the main source of vegetable protein are important for Turkey but for the whole world
The purpose of this study is to calculate Turkey's self-sufficiency rate of lentil production and to estimate the trends for the coming near future
Summary
Due to the increasing world population, food and nutrient requirements are ascending. The price of animal products may not be accessible for all, in the presence of protein requirements. They have storage difficulties due to their rapid deterioration. Vegetable protein can be stored for a longer time than the animal protein and is relatively accessible. Especially lentils, are an important source of vegetable protein. Legumes that make up the main source of vegetable protein are important for Turkey but for the whole world. The lentil nutrient value is quite high.
