Abstract

This study was conducted to determine the changes in physico-chemical quality of cluster berry after harvest and during storage for four local grape cultivars; Vitis vinifera L. cv. Kamali, Vitis vinifera L.cv. Taifi, Vitis vinifera L. cv. Hegazi and Vitis vinifera L. cv. Halwani. Each cultivar was harvested at optimum ripening and pre-cooled. Samples of each cultivar were placed in plastic bags and stored at 1˚C and 85-90%RH. for 30 and 45days. Quality parameter taken after harvest and throughout the storage period. The results showed that Kamali cv. superior over other cv s in berry length, TSS %, TA %, total sugars, while Halwani cv. surpassed significantly in bunch length and bunch loss weight. Hegazi cv. exceeded in berry width, juice volume and juice density. Taifi gave the highest bunch fresh weight, vitamin C, juice percentage. In general all tested cultivars could be stored successfully for 30 days. TSS , vitamin C, juice percentage and total sugar significantly increased when the storage period prolonged to 30 days but TSS/TA significantly increased when stored period for 45 days. Total acidity and juice density decreased significantly when storage period increased from 0 to 45 days.
