Abstract

The fermentation of an equimolar mixture of glucose and fructose into ethanol and sorbitol by a fructose negative mutant of Zymomonas mobilis is analysed using a recently described methodology (Ait-Abdelkader and Baratti, Biotechnol. Tech. 1993,329–334) based on polynomial fitting and calculation of ≪instantaneous≫ and ≪overall≫ parameters. These parameters are utilized to describe this mixed-substrate mixed-product fermentation.
