Abstract

Lipase catalyzed transestrification of tributyrin (1) with 1-octanol (2) in (1) was studied so as to determine how it is affected by water content and four different kinds of lipase (P.f. : Pseudomonas fluorescens, P.s. : Pseudomonas sp., C.c. : Candida cylindracea, and P.p. : Porcine pancreas) at various concentrations. In all cases, an optimum water content that would give a maximum transesterification rate increased with the concentrations of (2) and enzyme. The effect of the initial concentration of (2) on the reaction rate was also studied. The inhibitory effect of (2) was observed above 0.2M of (2), and P.s. and P.f. lipases were inhibited greater than the others.
