Abstract

Inulin is a robust substrate for the preparation of fructooligosaccharides. In the present research, hydrolysis parameters were optimized for the preparation of fructooligosaccharides from inulin using Aspergillus tritici endoinulinase in a batch system. Under optimized hydrolytic conditions viz. inulin concentration 6%, endoinulinase load 50 IU, hydrolysis time 10 h and agitation 125 rpm, 97.27% fructooligosaccharides yield was obtained. Fructooligosaccharides preparation contained 33.16% ketose (GF2), 24.00% nystose (GF3) and 7.39% fructofuranosylnystose (GF4). High substrate concentration, low enzyme dose and short hydrolytic period justifies the efficiency of the developed bioprocess for fructooligosaccharides synthesis from inulin by fungal inulinase.
