Abstract

Tomato processing is a global industry that requires large amounts of energy due to the prominence of concentrated products. Understanding the use of energy in industrial tomato processing facilities is necessary to identify opportunities to enhance efficiency. Energy efficiency is increasingly important as global resource demand grows and regulations surrounding energy use and associated greenhouse gas emissions become more stringent. Studies regarding resource use and energy-efficient alternative processing technologies must be considered in the context of the unique practices and needs of industrial tomato processing. Conventional and novel resource efficiency measures are discussed based on current tomato processing practices.
