Abstract

Endo-polygalacturonase (endo-PG) production byAspergillus sp. CH-Y-1043 using untreated lemon peel as the sole carbon source was investigated. This strain was observed to produce more activity of endo-PG at 37°C than at 29°C. Untreated lemon peel proved to be a beeter substrate than citrus pectin for endo-PG production. Modification of the culture medium and lowering of the initial pH to 2.8 caused a 10-fold increase in the production of endo-PG activity using lemon peel.
