Abstract
This work describes the oxidation potential of five synthetic analogous of capsaicin in Hartmann solution by differential pulse voltammetry (DPV) and square wave voltammetry (OSWV), the undec-10-enoate (4-hydroxy-3-methoxyphenyl) methyl showed the low oxidation potential (+460 and +496 mV by DPV and OSWV, respectively), these results qualify the compound as a good antioxidant agent.
