Abstract

目的:研究在淡豆豉发酵过程中桑叶、青蒿对大豆异黄酮含量的影响。方法:样品分4组:每组均含黑大豆300g,组2含青蒿30g,组3含桑叶30g,组4含青蒿、桑叶各30g。发酵21d。采用HPLC法测定大豆异黄酮含量。色谱柱:Diamonsil C18柱(250mm×4.6mm,5μm),流动相:乙腈-3%冰乙酸,梯度洗脱,流速:1ml/min,柱温:30℃,检测波长:261nm。测定发酵过程中大豆苷、染料木苷、大豆苷元、染料木素的含量变化。结果:随着发酵时间延长,各组大豆苷、染料木苷含量呈逐步下降趋势,苷元含量呈增加趋势,12d后变化趋于稳定。组4的大豆苷、染料木苷含量显著低于组2、3(P<0.01),多数大豆苷元、染料木素含量显著高于组2、3(P<0.01)。结论:在淡豆豉发酵过程,桑叶、青蒿可以促进大豆异黄酮苷向苷元的转化。
