Abstract

AbstractAn accelerated loss of titratable acidity occurs in irradiated fruit during storage at 37° F. The principal acids contributing to the titratable acid values have been identified and determined quantitatively. Changes in the titratable acid values were shown to be due primarily to changes in the malic acid content.
