Abstract

Viscosities of (l-alanine/l-threonine/glycylglycine+1.13molkg−1 aqueous d-glucose/1.27molkg−1 aqueous sucrose) systems have been determined as a function of molal concentration of amino acid/peptide at different temperatures: (298.15, 303.15, 308.15, 313.15, 318.15, 323.15, and 328.15)K. Using the viscosity values of the solvent and solution, viscosity B-coefficients, activation free energy (Δμ2°#), activation enthalpy (ΔH2°#) and activation entropy (ΔS2°#) values have been computed. The computed Jones–Dole B-coefficients and activation free energy (Δμ2°#) values have been discussed in terms of ionic–hydrophilic, hydrophilic–hydrophilic and hydrophilic–hydrophobic interactions; and structure-making/structure-breaking tendency of amino acid/peptide molecules.
