Abstract

Caramel (E150) refers to a large number of poorly defined and very complex products used as colourants in human foodstuffs and beverages. It has been demonstrated that oral administration of ammonia caramel (AC; Class III caramel colour) can cause a reduction in total white blood cell counts in rats, due to reduced lymphocyte counts (Evans et al 1977; Gaunt et al 1977; Sinkeldam et al 1988). This lymphopenic effect was found to occur only when the animals were fed a diet low in pyridoxine (vitamin B6) (Sinkeldam et al 1988).
