Abstract

Effect of soybean foods on growth in rats dosed with 0.3% BHT was investigated. Among rats fed with congealed soybean protein, natto or fortified natto, the depression of growth was smallest in rats fed with fortified natto, followed by those fed with unfortified natto. Owing to a high content of riboflavin and pantothenic acid in natto, the amount of these vitamins was higher in the liver of rats fed with natto and fortified natto. So the beneficial effect of the two kinds of natto on the growth might be ascribed to their high content of the vitamins. The concentration of the vitamins in the liver was lowered and activity of aminopyrinedemethylase in the liver was elevated by the administration of BHT. In the preparation of natto, addition of 1% of methionine to soybean at the time of soaking in water did not give rise to any disagreeable flavor of natto, so the fortification of methionine at this level seems to be a practical means to improve the nutritional value of natto.
