Abstract

AbstractFusarium moniliforme was shown to be a promising fungus for microbial protein production. 1−3The fungus grows well on the aqueous extracts of carob pods, a low value agricultural product well known in the Mediterranean areas. In a previous paper2quantitative data were presented on the production of fungal protein by growing F. moniliforme on a carob aqueous extract in a continuous culture. In the present paper the amino acid profile of the biomass was determined and the resulting essential amino acid index was calculated.
