Abstract

Plant based food products and medicines are given more consideration for their efficacy, safety and synergistic effects. Radiation processing has been valuably used for microbial decontamination and value addition of the plant materials. The current study is about the effect of gamma irradiation on the quality attributes of Ziziphus mauritiana Lam. leaves. The leaves of the plant were irradiated at the dose levels of 2.5, 5.0, 7.5, 10.0 and 12.5kGy. The irradiated and control samples were evaluated for vitamin, phytochemicals, antibacterial and DPPH scavenging activities. The results showed that gamma irradiation doses up to 12.5kGy enhanced the levels of certain phytochemicals and augmented the biological activities.
