Abstract
Homogenized whole milk in three types of conventional containers, carton, plastic jug and clear pouch, was exposed to fluorescent light intensities of 0 and 200 ft-c. at 4°C for periods of 0, 6, 12, 24 and 48h. Total folacin activity of the samples was determined microbiologically with L. casei. Exposure to light intensity of 200 ft-c over a period of 48h did not significantly affect total folacin activity in homogenized milk regardless of type of container. After exposure to light intensity of 200 ft-c for 48h there was an indication that total folacin activity began to deteriorate in homogenized milk held in the clear pouch.
