Abstract

1. 1. This study was undertaken to determine the influence of dietary carbohydrate sources: wheat meal, bread meal, soluble corn starch, native potato starch and sorghum meal, on soluble protein, enzyme activity (aldolase) and glucose concentration in muscle and liver of European eels ( Anguilla anguilla). 2. 2. There was less soluble protein in both muscle and liver of eels fed 30% wheat meal or bread meal than the other experimental groups. 3. 3. However, eels fed 30% bread meal or soluble corn starch had a higher glucose concentration in muscle and liver than the other experimental groups. 4. 4. High enzyme activity (aldolase) was found in the liver of eels fed 30% wheat meal, bread meal or soluble starch.
