Abstract

Dragon fruit peel is a byproduct of agriculture that naturally dyes with betacyanin. Application of betacyanin as a natural dye obtained by extraction. In this study, betacyanin was extracted from dragon fruit peel using the Ultrasonic-Assisted Extraction (UAE) technique in order to assess its impact on yield, betacyanin concentration, and redness value. UAE performed extraction with several amplitude levels (60, 72, 84, and 96%) and time durations (4; 10; 16; 22 and 28 minutes). The results significantly affected betacyanin content, redness value, and yield. Based on the Zeleney, the best treatment showed that the extraction with an amplitude of 84% for 16 minutes produced the highest response with betacyanin content, redness value, and yield, respectively of 282.002 mg/L; 48.40 and 64.52%.
