Abstract

ABSTRACTThe fatty acid composition of muscle and depot fats from four strains of geese was determined by GLC analysis. Differences due to sex and age of goose were not significant (P < 0.01). The major fatty acids of depot fat were oleic (54%), palmitic (22%), linoleic (11%) and stearic (8%). Muscle contained from 4.7–9.6% fat composed mainly of oleic (42%), palmitic (25%), linoleic (14%) and stearic (12%) acids. The muscle fat content of Pilgrim and Hungarian geese was less than that of the Crossbred (P < 0.01) and of the Chinese strain.
