Abstract

An on-line fuzzy controller was proposed to control water activity during the drying of cured sausages. Drying was carried out in a pilot-plant dryer. This controller focused on keeping the water activity at the desired value by raising and lowering the relative humidity set point using estimations of water activity (aws) and changes in surface water activity (daws) as inputs. By keeping the water activity at the product surface above a given value, the product's quality is ensured. Results showed that the water activity was controlled successfully, and that the controller was able to respond quickly to any disturbances that occurred during the process.
