Abstract

1. 1. Nitrogenous components were examined comparatively in the extracts prepared from white and dark muscles of nine species of fresh-water fish. 2. 2. Dark muscle contained higher amounts of taurine and inosine and lower ones of imidazole compounds, creatine IMP and non-protein nitrogen than white muscle. 3. 3. The distribution of free imidazole compounds was dependent on the groups of fish: high levels of anserine in Salmonoidei; carnosine in Anguillidae; histidine in Cyprinidae; and very low levels of the compounds in Siluridae and Cichlidae.
