Abstract
Although it is well known that the serum free fatty acid (FFA) pool is reduced during carbohydrate loading primarily in response to insulin secretion, it has not been established whether all or specific FFA are affected. This is of particular interest in view of the fact that the rate of carbohydrate absorption has a dramatically different effect on the FFA response. Rapid carbohydrate loading in a short period of time induces a rapid change in blood glucose and FFA depression followed by FFA rebound after 2h. Slow carbohydrate loading, on the other hand, results in a sustained depression of FFA over at least 4h. We have therefore compared the effects of rapid carbohydrate loading (glucose bolus) with slow carbohydrate loading (glucose sipping) on the response of the total FFA pool over 4h and have determined the changes in individual FFA, especially essential fatty acids, in healthy male volunteers.
