Abstract

Anthocyanin belongs to a large group of phenolic compounds called flavonoids. It is found primarily in fruits, flowers, roots and other parts of higher plants. Within the black carrot, it has been found that the cyanidin component 1,2 diol was the major anthocyanine. Since the terminal thiols potentially display chemical interactions with borate additives, anthocyanin from the black carrot can act as a sensing material for detecting borate in the environment. As a natural dye, anthocyanin responds to pH change of the medium. Here, we present an application of black carrot dyes for pH sensing and for the detection of borate additives within meats. The dyes were encapsulated within a mesoporous silica (SiO2) matrix in order to prevent the sensing materials from dissolution into the aqueous medium. The encapsulation was done in situ during preparation of silica nanoparticles (size from 100 nm to 500 nm) following an advanced Stober method. These anthocyanin-encapsulated silica nanoparticles show a clear color change from green in an aqueous solution free of borate to GRAY-red in the presence of borate additive and red (pH 2) to green (pH 10).
