Abstract

The possibility of analysis of the shape of colloid particles in solutions of latex and French and Moldovan wines with a flow-type ultramicroscope and digital photo camera was studied. The micrographs taken can be used to determine distances between particles by comparison with particle radii found by an independent method. The concepts of Deryagin-Landau-Vervey-Overbeek’s physical theory of stability of colloid systems were used to calculate the molecular force constants for wine particles.
