Abstract
The solid fat content of fats and oils can be determined rapidly by low-resolution NMR (LR-NMR). The advantage of this technique over classical methods such as dilatometry are speed, convenience and cost per measurement. The four principal LR-NMR methods (direct, indirect, solid echo and curve deconvolution) are discussed and compared. Special attention is focused on the direct pulsed LR-NMR technique.
