Abstract

Recent serological tests have shown that children who are allergic to egg white are also susceptible to egg yolk allergen components. Based on the clinical status and nutritional value, the antigenic epitopes of Gal d 5 and Gal d 6, the main allergens of egg yolk, were analyzed from the physical properties, chemical properties, two-dimensional structure, three-dimensional structure, major T cell epitopes and B cell epitopes of egg yolk by using the method of bioinformatics. The results show that both Gal d 5 and Gal d 6 are unstable hydrophilic proteins. The two-dimensional structure of Gal d 5 consists of 66.18% spiral, 4.23% extension chain, 2.93% spiral and 26.67% random coil. The secondary structure of Gal d 6 is composed of 21.40% helices, 24.21% extension strands, 3.51% turns and 50.88% random coils. Here, we report up 7 main T cell epitopes and 6 main B cell epitopes in Gal d 5 while 7 primary T cell epitopes and 4 primary B cell epitopes are in the Gal d 6 structure. In conclusion, this study aims to provide a more comprehensive biological information of the allergens, Gal d 5 and Gal d 6, so as to provide a theoretical basis for the faster and more accurate treatment of egg yolk allergy patients and the future development of multi-epitope diagnosis.
