Abstract

A 50kg per batch yam parboiler was developed as a unit equipment for processing of Instant Yam powdered Flour (IYPF). It is made up of insulated parboiler chamber, five compartment tray cabinet and gas burner heating unit. The principle of operation is steaming at high pressure. Comparison is drawn between the parboiler and imported one. It is found to be more efficient and durable. 2mm thickness of slice 50kg yam Dioscorea rotundata was just cooked in 8 minutes.Keywords: parboiler, yam, steaming and pressure.Nigerian Food Journal Vol. 23 2005: 225-230
