Abstract

Abstract Densities and viscosities of glucose and fructose solutions in water and in aqueous 0.5 mol dm−3 NH4Cl have been measured at 298.15, 303.15, 308.15 and 313.15 K. From density data, apparent molar volumes at infinite dilution (φ ;°v) and from viscosity data, the B-coefficients are calculated. Glucose and fructose are found to be structure promoters in water as well as in aqueous 0.5 mol dm−3 NH4Cl solutions.
